I had a few pesky overripe bananas in my fruit bowl last weekend, and when that happens there is only one thing to do.
Make banana bread.
Iand#8217;d also just received a jar of Beerenberg Blood Orange Marmalade. Iand#8217;m not a marmalade fan at all, but this one is much sweeter than other ones Iand#8217;ve tasted, so I decided to tweak my usual dense and moist banana bread recipe and top it with a sweet glaze.
I simply warmed three tablespoons of the marmalade in a saucepan and then poured it over the cooked cake and brushed it in with a silicone brush.
The marmalade added a lovely tang and a welcome sweet/sticky element when served in thin slices with a dollop of whipped cream. Just heavenly.
