Christie Connelly Short Cut Cook: Ten Breakfast | Fig and Cherry

They let me back on TV! This time the Breakfast team asked me to cook two unusual recipes usingand#8230; beer. Sweet recipes.


Quite a difficult brief and#8211; but I was glad I didnand#8217;t have to do any deep frying on live TV and#8211; that could have ended in disaster. Once you look past beer batters, pies and long braises, beer is actually quite versatile and works great in selected sweet recipes.

Beer peanut brittle


First recipe was peanut brittle flavoured with beer. Simply boil a cup of peanuts in a cup of beer mixed with 1/3 cup sugar. Spread out onto an oiled baking tray and sprinkle with sea salt flakes. Make a quick caramel using 1/2 cup sugar and 3 tablespoons of water. Pour it over and bake for 10 minutes. Allow to cool completely then break into pieces and serve.


Guinness and chocolate cake


I adapted this Nigella Lawson recipe by substituting in 80g of ground almonds for some of the flour and a tablespoon of Baileyand#8217;s instead of vanilla extract. I also popped some Baileyand#8217;s into the icing. Itand#8217;s a great cake for St Patricks Day!
