Not only is this the easiest salad in the world, but it can also be the tastiest if мейд with home grown vegetables.
I was lucky enough to score a beautifully crisp and slightly bitter home grown cucumber and knew this was the only way it could be served.
The fresh little cucumber was sliced and mingled with vine ripened tomato, splashed with a little olive oil and white balsamic vinegar, then finished with a luxurious sprinkling of truffle salt. Perfection.
Let the salad sit while you make the rest of your dinner (whatever that may be) and basque in the glory of freshly picked goodness.

Tomato and cucumber salad
serves 2 as a side dish (easily doubled, trebled or more)
1 medium cucumber
1 large vine ripened tomato
1 teaspoon white balsamic vinegar
2 tablespoons olive oil
pinch truffle salt (or regular salt)1. Slice the cucumber and tomato and place into a shallow bowl.
2. Splash over the vinegar and oil and sprinkle with truffle salt. Mix gently and allow to sit for 10 minutes before serving.
